Flatware

In a white tablecloth operation, there should be at least 1 ½ times the number of complete place settings required to fully set every seat in the house. The exception is that there should be three times the number of teaspoons as there are seats. This is because teaspoons are used with the meal and also for desserts, coffee or tea. In a quick turnover operation, more FLATWARE is needed to allow for the time needed to wash, dry and return settings to the tables. 2 to 2 ½ settings are generally required, with four times the number of teaspoons as there are seats.
